Kuivatut hedelmät eivät lapsena kuuluneet suosikkeihini. Ainoa, missä pidin esim. rusinoista, oli mummoni tekemä rusinakeitto. Todennäköisesti siksi, että siinä rusinat ovat lähestulkoon palanneet lähtötilaansa eli ovat pulleita ja pehmeän mehukkaita kuten rypäleet. Vasta myöhemmin löysin kuivien hedelmien ihanan maailman ja samalla myös sekahedelmäkeiton suloisuuden 😉 Sekahedelmäkeitto saattaa ulkomaalaisten korvaan kuulostaa hieman erikoiselta, mutta se on todellakin kokeilemisen arvoinen.
As a child I didn’t like dried fruits at all, definitely not one of my favourites. The only place where I liked e.g. raisins, was the raisin soup made by my grandma. And most likely due to the fact that in the soup the raisins have kind of returned to their original state, meaning that they are plump, soft and juicy like grapes. Only later on I found the wonderful world of dried fruits and at the same time the lovely dried fruit soup, also known as Scandinavian sweet soup 😉 Dried fruit soup might sound a bit funny to all non Finns (or Scandinavians), but it’s really worth trying.
Jo usean vuoden ajan, myös tänäkin vuonna, sekahedelmäkeitto (tai veskunasoppa, kuten mummoni sitä kutsui) on kuulunut joulumme aamiaispöytään riisipuuron kera. Niin hyvää se on, että syömme sitä vielä jälkiruoaksikin jouluruoan jälkeen, tosin sillä kertaa kermavaahdon kera höystettynä.
Already for many years, also this year, dried fruit soup or “Scandinavian sweet soup” (my grandma had a special name for the soup from “the old days”, but unfortunately I don’t know how to translate it) has belonged to our breakfast table at Xmas along with rice porridge. It’s so good that we eat it as a dessert after Xmas dinner, this time with whipped cream though.
SEKAHEDELMÄKEITTO (8-10 hengelle)
300 g kuivattuja hedelmiä (itse pidän luumuista, päärynöistä, omenoista, aprikooseista ja rusinoista)
15 dl vettä
1,5 – 2 dl ruokosokeria
1 kanelitanko
n. 8 pikkusormenpään kokoista palaa sitruunan kuorta
3 – 4 rkl perunajauhoja
3/4 dl vettä
1/2 sitruunan mehu
Laita vesi ja sokeri kattilaan. Lisää kuivatut hedelmät. Liota hedelmiä sokerivedessä, kunnes sokeri on sulanut eli muutama tunti, mielellään yön yli. Lisää kanelitanko ja sitruunan kuoripalat. Keitä kunnes hedelmät nousevat pintaan ja pehmenevät (osa hedelmistä on jo liotuksen jälkeen pinnalla), noin 5-10 minuuttia.
Kun hedelmät kelluvat ja ovat pehmeitä, ota kattila pois liedeltä. Nosta hedelmät pois tarjoiluastiaan reikäkauhalla. Poista kanelitanko ja sitruunan kuoripalat. Yhdistä perunajauho ja vesi, sekoita ja lisää ohuena nauhana liemeen samalla sekoittaen. Nosta kattila takaisin liedelle ja anna muutaman kuplan nousta pintaan. Poista kattila liedeltä.
Mausta keitto sitruunamehulla ja kaada hedelmien päälle tarjoiluastiaan. Voit nauttia keiton joko lämpimänä tai kylmänä. Keitto säilyy kylmässä noin kahden päivän ajan.
DRIED FRUIT SOUP (serves 8-10)
300 g dried fruit (I prefer a mix of pitted prunes, pears, apples, apricots, and raisins)
1,5 l water
150 – 200 ml brown sugar
1 cinnamon stick
approx. 8 pieces of lemon zest (size of the tip of the little finger)
3 – 4 tbs potato flour (starch)
75 ml water
juice from 1/2 lemon
Put water and sugar into a pot. Add dried fruits. Soak the fruits in the liquid until sugar has dissolved, so a couple of hours, preferably over night. Add cinnamon stick and lemon zest. Place the pot on the stove and cook until fruits rise to the surface and are soft (some fruits are already on the surface before cooking), about 5-10 minutes.
When fruits have surfaced and soft, remove pot from stove. Take out fruits with a skimmer and place them in a bowl. Take out cinnamon stick and pieces of lemon zest. Combine potato flour (starch) and water, mix and add as a thin stream into the soup mixing at the same time. Put the pot back on the stove and wait until a few bubbles surface. Remove pot from stove.
Add lemon juice, mix and pour soup on top of the fruits in the bowl. Serve the soup either warm or cold. You can store the soup in a refrigerator for about two days.
